    Turkey with Truffle stuffing - the traditional French way by Olivier Elzer
    Made by 2.4kg, with serious black truffle stuffing to become 3.2kg in weight, the handmade Thanksgiving / Christmas French turkey, portions for 4 to 6 persons. 
    Chef Olivier insists doing it the classic way - the double-layer stuffings - one between the skin and meat, one inside the turkey interior. 

    The stuffings: seasonal black truffle, grounded pork and chicken meat, garlic and onion. 

    One of the  2 Michelin starred Chef Olivier's signature dishes is French roast chicken, 
    and chef is also famous for his extraordinary double-layer stuff turkey,
    for which many fans follow every year for his famous handmade pieces.

    Chef Olivier prepares limited offer of classic French turkeys with truffle stuffing, comes along with extra bag of gravy and butter garlic cloves.

    The turkey is sous-vide, cooked, pouched, and chilled to deliver.  It can be stored in 0-4 degree chiller for up to 3 weeks. 
    Storage and reheat instruction: 

    1) Storage temperature
    The stuffed turkey is thoroughly pouch-cooked, vacuum in retort pouch bag (高溫蒸煮袋), and kept chilled to deliver.
    Please keep the turkey with original packing pouch bag in chiller (0-4 degree) before eating. 
    Gravy and butter garlic in foil bag, also stored chilled before eating

    2) Reheating instruction:

    - Put the the whole turkey (chicken) with retort pouch (高溫蒸煮袋) in a water bath of 50 degree, or steam oven at 68 degrees,  for 50 minutes to warm and make tender the turkey. 
    - Prepare a foil tray.  Take out the turkey from the pouched bag, pour meat sauce on the turkey and place in the foil tray, get ready to put in oven to brown it. 
    - Preheat oven at 180C, put the turkey with foil tray to roast for 25 minutes until brown, cut and serve. 
    - Water bath the gravy and butter garlic cloves in hot water for 10 minutes, put on side dish to serve
